Sushi Kappo is Brisbane’s most faithfully crafted kappo-style omakase, where precise artistry and intimate counter dining define the experience.
Led by Head Chef Kobayashi, a Michelin-trained master from Ginza, the counter celebrates seasonality, discipline, and simplicity. His deliberate movements create a dialogue between chef, ingredient, and guest - a connection to the blessings of land and sea that shape each course.
The multi-course menu at Sushi Kappo reflects Australia’s seasons with influences from Ginza, crafted from premium local ingredients and select produce from Japan. Each guest is welcomed into an Ichigo-Ichie moment - every encounter treated as unique and deserving of quiet, intentional care.
Our hospitality is expressed through quiet support: subtle, attentive gestures that honour the person in front of us. Every movement and every plate conveys respect and connection. The cuisine begins with pure deliciousness and extends toward nourishment, offering dishes that bring balance, comfort, and a lingering sense of being genuinely cared for.
A curated sake and wine program completes the experience. Guided by our head sommelier, Sean Lam, guests explore Japan’s diverse brewing regions alongside refined Australian and international cuvées selected to harmonise with the omakase.
