Our approach to hospitality is grounded in the belief that fulfilment arises through attention, restraint, and care, rather than abundance or display. Every detail – from the pacing of the meal to the dialogue between chef and guest – is designed to create a sense of presence that feels personal, unforced, and memorable.
The experience is shaped by the Japanese philosophy of ichigo ichie – “one time, one meeting” – a reminder that each encounter is unique and can never be repeated in exactly the same way. No two dinners at +81 are ever exactly alike.
At the heart of +81 is the rare combination of sushi and kappo dining – a style of experience so uncommon that it scarcely exists even in Japan. Traditional Japanese techniques are applied with precision and respect, while the menu itself remains intentionally non-traditional, allowing ingredients, ideas, and expression to evolve continuously.
By removing what is unnecessary, we allow flavour, texture, seasonality, and timing to speak clearly. This philosophy of restraint creates dishes that feel complete without excess – refined yet deeply satisfying.
