Reflecting the philosophy of ichigo ichie – “one time, one meeting” – the beverage program evolves continuously alongside the menu. No two experiences are ever exactly alike.

The sake collection explores the depth and diversity of Japan’s brewing culture through a carefully curated selection housed in temperature-controlled fridges. The program spans regional styles and philosophies – from the aromatic and elegant expressions of Tōhoku to the rich and structured brews of Kyūshū, alongside revered brewing regions such as Hokuriku and Kansai.

The list brings together celebrated producers including Noguchi Naohiko Sake Institute and Kokuryu, alongside emerging breweries shaping the future of sake craftsmanship in Japan.

Created through a meticulous multi-day process using seasonal produce, Japanese teas, freeze integration, and restrained technique, the Neo cocktails offer a contemporary interpretation of pairing unlike anything traditionally found within omakase dining. Designed to unfold slowly and harmonise with the cuisine, the Prestige Neo Experience is exclusive to +81 and cannot be experienced anywhere else in the world.
