Our Philosophy

Our Philosophy is Guided By a Japanese Approach to Fulfilment.

At +81, philosophy is not something explained – it is something felt over the course of an evening. Our approach to hospitality is grounded in the belief that fulfilment arises through attention, restraint, and care, rather than abundance or display.

Our cuisine is shaped by seasonality and respect for ingredients, guided by Japanese technique and balance. By removing what is unnecessary, we allow flavour, texture, and timing to speak clearly. This philosophy of subtraction creates dishes that feel complete without excess, leaving guests satisfied, comfortable, and at ease.

Hospitality at +81 is rooted in omotenashi – the quiet art of anticipating needs before they are spoken. Service is guided by observation rather than instruction, and presence rather than performance. From pacing to seating, every element is designed as a dialogue between guest and host, creating moments that feel personal, unforced, and singular.

health benefits

The menu is grounded in time-honoured Japanese tradition, shaped by years of experience and refined through a modern, health-conscious perspective. The result is a dining experience that feels luxurious yet restrained — satisfying without excess.

By reducing ingredients that can place unnecessary burden on the body, such as refined sugar, wheat, and dairy, each dish is designed to leave guests feeling nourished and light, rather than weighed down. Unusual for a Japanese restaurant, +81 Sushi Kappo is entirely gluten-free, dairy-free, and free from refined sugar.

Our aim is to create a table where guests — with or without dietary restrictions — can share the same food, the same moment, and the same space with a smile.

Muge Byōdō is a philosophy of care that brings people closer together. It represents a way of eating that helps us rediscover our ability to truly feel and appreciate what it means for something to be delicious.

“At +81, we embrace the philosophy of fulfilment. It represents the joy of shared values and the profound beauty of Japanese culture that moves the soul.”
– Ikuo Kobayashi, Head Chef
